Place your can of coconut milk in the refrigerator for 1-2 days.
Chill you mixing bowl for 15 minutes in the fridge.
Scoop out the hardened coconut cream. (Store the leftover coconut water to use later on).
Using a hand mixer, fluff up the coconut cream for about one minute. Add your sweetner of choice and vanilla and mix for an additional minute or until smooth and creamy.
Store the leftover whipped cream in the fridge in a sealed container for up to one week.
